Master heat control and the oil film for natural food release.
This is not a coating. Stainless steel may look smooth, but its surface contains microscopic texture. When the pan is properly preheated and oil is added, an even oil film reduces direct contact between the food and metal. As the surface of the food sets and browns, adhesion gradually decreases and the food releases more easily.
Key concept: “Physical non-stick” or natural food release is different from the low-stick behavior of coated cookware. Results depend on pan temperature, the amount of oil, moisture in the ingredients, the type of food and when it is turned.
Six Steps for Natural Food Release
1. Wash and dry the cookware thoroughly.
2. Preheat the empty pan over medium heat.
3. Test the temperature with a few drops of water. Rounded beads that glide across the surface indicate a suitable temperature.
4. Add an appropriate amount of oil and coat the cooking surface evenly.
5. Add ingredients after excess surface moisture has been removed.
6. Allow one side to cook and brown before turning. The food will release naturally when it is ready.
